Ingredients

  • 1 boneless skinless chicken breasts
  • salt
  • ground black pepper
  • 1 teaspoon olive oil
  • 1/4 cup onions (minced)
  • 1 garlic cloves (minced)
  • 1 tomatoes (small, chopped)
  • 1 tomatoes (small, chopped and mashed)
  • 4 prunes (seeded and chopped)
  • 1/3 cup water
  • 1/2 red bell pepper (seeded)

Directions

  1. 1Season the chicken with salt and pepper
  2. 2Add 1 tablespoon of olive oil to a skillet and heat on medium heat.
  3. 3Place the chicken into the skillet and lightly it until each side turns golden. The chicken does not have to be fully cooked. Remove the chicken from the skillet and set aside.
  4. 4Add the onion and garlic to the skillet and saute for 2 minutes.
  5. 5Add the chopped tomatoes and cook for 2 minutes
  6. 6Place the chicken into the skillet again and let it cook for another 5 minutes.
  7. 7Add the mashed tomato, prunes, and water. Cover the skillet and cook for about 10 minutes.
  8. 8Add the bell pepper and cook for 3 minutes.
  9. 9Serve the chicken with tortillas.
