Ingredients

  • 1 red onion
  • 4 bell peppers
  • 400 grams chicken
  • extra virgin olive oil
  • 3 ounces white wine
  • salt
  • 200 milliliters tomato sauce
  • ground sage

Directions

  1. In a nonstick pan, heat 2 tbsp. oil. Add the onion and fry for a few minutes.
  2. Add the peppers and cook for 10 minutes, adding a little hot water, as necessary.
  3. Add the chicken, season with salt and leave to cook for 20 minutes.
  4. When all the liquid has cooked away, add the wine and cook until evaporated.
  5. Add the tomato sauce and cook 2 minutes until fully mixed in.
  6. Serve warm, sprinkled with sage.

This recipe had all the great elements for an awesome meal, but for me it needs something more. The flavor combinations were good, but I think the basil was too overpowering. I think that I would use less basil and maybe substitute the white wine for something else.
