Description

This chicken stir-fry will satisfy any Chinese take-out craving you may have, while saving you some money. Honey roasted peanuts add a sweet crunch that complements the tang of lemon in this chicken and broccoli dish. Serve alongside rice.

Ingredients

  • cooked rice
  • 400 grams frozen broccoli
  • olive oil
  • 1 onions (medium)
  • 1 teaspoon sugar
  • 3 chicken breasts
  • salt
  • 80 grams honey roasted peanuts
  • 1/2 lemon juice

Directions

  1. 1Cook rice according to package instructions.
  2. 2Boil the broccoli in a pot of salted water, but do not overcook.
  3. 3Heat the olive oil in a large frying pan, add the diced onion, and and sprinkle with sugar. This will make the onions caramelize faster. Cook on a low heat. When the onion starts getting brown, add the chicken breast in cubes, season with a bit of salt, and add the lemon juice. Stir occasionally.
  4. 4When the chicken is almost done, add the peanuts, stir well, and cook for another 3 to 4 minutes.
  5. 5Drain the broccoli. In a large bowl, mix the chicken with the peanuts, and broccoli.
  6. 6Serve with rice.
