  • 1 tablespoon olive oil
  • 2 cloves garlic (finely chopped)
  • 2 chicken breast halves (skinless and deboned)

  • 2 tablespoons low-fat mayonnaise
  • 1 tablespoon capers (chopped)
  • dried dill (crushed)
  • 1 teaspoon Dijon mustard

  • 3 cups lettuce (assorted, thinly sliced)
  • 1/2 green bell pepper (thinly sliced)
  • 2 tomatoes (small, chopped)
  • 1/4 cup onion (thinly sliced and marinated in water and vinegar)
  • 1/2 cup cucumber (seeded and chopped)

    Directions

    1. Mix the parsley, Valentina sauce, oil, and garlic. Season with salt and pepper to taste. Marinate the chicken in this mixture for 15 minutes in the refrigerator.
    2. Roast the chicken in a hot skillet until golden brown on both sides. Let it cool and cut into strips.
    3. Mix the mayonnaise, capers, a pinch of dill, and the mustard. Season with salt and pepper to taste.
    4. Mix the lettuce, bell pepper, tomato, onion, and cucumber. Dress the salad and toss carefully using tongs. Add the chicken strips and serve.
