Ingredients

  • 4 boneless skinless chicken breasts (small)
  • 2 cloves garlic (sliced)
  • 2 teaspoons olive oil
  • 2 tablespoons maple syrup (plus additional to serve)
  • green beans
  • mashed potato
  • 1/2 papaya (peeled, seeded and chopped)
  • 1/2 red onion (small, finely chopped)
  • 2 tablespoons cilantro leaves
  • 1/2 lime peel (grated and lime juiced)
  • 1 red chili pepper (small, seeded and finely chopped)

Directions

  1. Slit each chicken breast in a few places and push in garlic slices. Brush with oil and season to taste.
  2. Preheat a grill pan on high heat or preheat the grill to medium-high. Cook chicken for 4-5 mins, brushing with maple syrup, until cooked through.
  3. For the papaya salsa, combine all ingredients in a medium bowl.
  4. Top chicken with salsa. Drizzle with additional maple syrup, if desired. Serve with mashed potatoes and green beans.
