  • 1 mango (diced)
  • 1 cucumber (small, diced)
  • 1/2 red onion (small, diced)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 4 boneless skinless chicken breasts
  • steamed rice (to serve)

Directions

  1. Toss mango, cucumber and onion with 1 tsp of olive oil in a medium bowl.
  2. Combine remaining oil and paprika and brush over chicken. Heat a lightly oiled skillet on medium heat. Cook chicken for 4-5 mins each side, until browned and cooked through.
  3. Serve chicken on steamed rice. Top with salsa and serve.
