Ingredients

  • 1 1/2 pounds baking potatoes (cut into chunks)
  • 2/3 cup milk
  • 1 pinch grated nutmeg (freshly)
  • 1 tablespoon vegetable oil
  • 14 ounces chicken breasts (cut into large chunks)
  • 3/4 pound leeks (shredded)
  • 2 apples (cored and cut into wedges)
  • 3 ounces gouda cheese (grated)

Directions

  1. Preheat oven to 375°F. Cook potatoes in boiling, salted water for 20 mins or until tender. Drain and return to pot. Beat in milk, add a little nutmeg and season. Transfer to a shallow baking dish.
  2. Heat oil in a frying pan, season chicken and sauté for about 6 mins until cooked through. Remove from heat. Add leeks and cook for 2 mins, stirring. Transfer to baking dish and arrange apples and chicken on top. Cover with cheese and bake for 25-30 mins until melted and golden.
