Ingredients

  • 2 chicken breast halves (skinless and deboned)
  • 3 cloves garlic
  • 1/4 teaspoon salt
  • 1/2 teaspoon lemon pepper seasoning
  • 1/2 teaspoon chili (de arbol flakes, or crushed red pepper flakes)
  • 1 tablespoon olive oil
  • cooking oil (spray)
  • 3 cups lettuce
  • 1 tomatoes (cut into fourths)
  • pickles (to taste)
  • 2 tablespoons parmesan cheese (grated)
  • 1 lime
  • 1 tablespoon olive oil
  • salt
  • ground black pepper

Directions

  1. 1Cut the chicken into strips.
  2. 2Mince the garlic and mix with the salt, lemon pepper, and chili. Add the olive oil and mix well.
  3. 3Cover the chicken strips with this marinade and let it rest for 30 minutes in the refrigerator.
  4. 4Spray cooking oil in a skillet and place over medium-high heat. Add the chicken strips and cook until golden brown.
  5. 5For the salad, add the lettuce, tomato, and pickles. In an airtight container, add the lime juice, olive oil, and salt and pepper to taste. Close the container and shake vigorously. Dress the salad with the vinaigrette.
  6. 6Add the chicken strips on top and sprinkle with Parmesan cheese.
