Perfectly crispy chicken skin atop tender meat smothered in a very light weight and zesty sauce, with rosemary and lemon juice. Each serving contains less than 200 calories and 14g of protein. Once all of the ingredients are mixed and the chicken is prepared, stick the baking pan in the oven and walk away. Simple to bake and even easier to eat. Combine with a starch, such as pasta or rice for a fuller meal.

Ingredients

  • 8 chicken pieces
  • 8 slices coppa (or bacon)
  • 8 sprigs rosemary
  • olive oil
  • 1 lemon juice
  • mustard

Directions

  1. Preheat oven to 210 degrees Celsius.
  2. With a small knife, make flesh-deep slits in the skin of the chicken.
  3. Slide a slice of coppa inside the slits, under the skin.
  4. Brush the chicken pieces with mustard, place them in a baking pan covered with parchment paper (for easy cleaning).
  5. Place a sprig of rosemary on each piece of chicken.
  6. Spray with olive oil (about 2 tablespoons) and lemon juice.
  7. Sprinkle with coarse salt and pepper.
  8. Bake for 50 minutes, then reduce temperature to 180 degrees for 15 minutes.
