Ingredients

  • 2 chicken breasts (cut into pieces)
  • 350 grams portobello mushrooms (sliced)
  • 100 grams pancetta (diced, may substitute turkey sausage)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 bunch parsley (minced)
  • 1 can beer
  • 1 lime
  • worcestershire sauce
  • 2 tablespoons butter

Directions

  1. Marinate the chicken in the lime juice and Worcestershire sauce.
  2. Meanwhile, fry the pancetta in a little oil. When browned, lower the heat to medium, add the onion and garlic, and fry for 5 minutes. Add the mushrooms and cook for 5 minutes more.
  3. Add the beer, allow the alcohol to evaporate a little, for 2 or 3 minutes, then lower the heat.
  4. Sear the chicken in a hot skillet until browned. Add them to the beer mixture and cover. Cook for 15 minutes on low heat. Add the butter and mix slightly before serving.

I like to have the chicken marinate in the sauce for at least a few hours, not just right before cooking. You really want to allow the sauce and lime juice to soak in. The beer brings another dimension to the taste as well, but make sure the alcohol is evaporated well if you're not a huge fan of that taste (like with kids). It's still a great recipe that produces tender chicken with nice taste and texture thanks to the mushrooms.
