Description

Fideua is basically a version of paella that is made with pasta instead of rice. With carrots, garlic, bell peppers, mushrooms, and leeks, this dish is bursting with flavor. Instead of the traditional seafood that is so popular in traditional paella, this recipe features chicken for a bit of lean protein. This dish reheats beautifully, so you can bring the leftovers to the office for lunch or enjoy them the next day for dinner.

Ingredients

  • vegetable oil
  • 400 grams chicken
  • 300 grams noodles
  • 1 chive
  • 2 garlic cloves
  • 1 carrot
  • 1 green bell pepper
  • 1 leek
  • 6 garlic sprouts
  • 250 grams mushrooms
  • 600 milliliters chicken broth

    Directions

    1. Fry the chicken in a large pan with 1 tablespoon of oil. Once golden brown, remove and set aside.
    2. Stir-fry the noodles for a couple of minutes. Remove and set aside.
    3. Add another tablespoon of oil on medium heat. Add the chive, garlic, carrot, bell pepper, leek, and sprouts. Cook for 5 minutes and add the mushrooms. Cook for another 5 minutes.
    4. Place the chicken and the noodles into the pan.
    5. Add the chicken broth and bring to a simmer. Remove from the heat and let it rest for 10 minutes.
