Ingredients

  • 750 milliliters chicken stock
  • 3 tomatoes (deseeded and cut into thin strips)
  • 1 chicken breast fillets (about 150g)
  • 1 teaspoon butter
  • 200 grams leeks (cut into thin strips)
  • 1 clove garlic (peeled and crushed)
  • 3 sprigs fresh thyme leaves (stripped from stems and chopped)

Directions

  1. Place the stock and tomatoes in a saucepan and crush the tomatoes slightly. Add the chicken, bring to a boil, cover and simmer for 15 mins. Remove the chicken from the pan, allow to cool slightly and cut into thin strips.
  2. Meanwhile, heat the butter in a pan and sauté the leeks and garlic until softened. Add to the soup along with the chicken strips and thyme. Season to taste.
