- 2 boneless skinless chicken breasts (medium)
- 100 grams turkey sausage (sliced)
- 10 leaves spinach
- 2 cups lettuce (cut into bite-sized pieces)
- 2 tomatoes (diced)
- 1/4 red onion (cut into thin half moons)
- 5 sprigs cilantro
- beans (Prepared)
- 2 Tbsp. olive oil
- 1 tsp. oregano (ground)
- 1 lemon
- 3 cloves garlic (finely minced)
- 1 Tbsp. soy sauce
- ground black pepper
- 1/4 cup tomato sauce (prepared)
- 1 lemon
- 2 Tbsp. olive oil

Directions
- Combine the olive oil, oregano, lemon juice and rind, garlic, soy sauce, and pepper. Add the chicken, cover, and let marinate in the refrigerator for 30 minutes.
- Brown the sausage in a skillet and blot off the excess grease with a paper towel. Cook the chicken in the same skillet, allowing it to brown on both sides. Remove from pan, cool for 10 minutes, and then chop. Set aside.
- Mix the spinach with the lettuce, tomatoes, onion, and cilantro. Divide onto plates and place the sausage and chicken on top.
- Whisk the tomato sauce, lemon, and olive oil together. Drizzle over the chicken and serve with warmed beans on the side.
