Chicken and Prosciutto Bites

Ingredients

  • 6 chicken fingers (flattened and halved lengthwise)
  • 3 slices prosciutto (quartered)
  • 12 fresh basil leaves (plus extra for garnish)
  • 6 sun-dried tomatoes (halved)
  • 2 tablespoons oil
  • aioli (to serve)

Directions

  1. Place chicken tenders on a board. Top each with prosciutto, basil leaf and sun-dried tomato half. Roll up tightly and secure with a toothpick.
  2. Heat oil in a skillet on medium heat. Cook chicken bites for 8-10 mins, turning occasionally, until golden and cooked through. Garnish with basil and serve with aioli.
