Ingredients

  • 2 tablespoons vegetable oil
  • 1 chicken breast (sliced)
  • 3 1/2 ounces pork loin (sliced)
  • 1 tablespoon soy sauce (plus extra, to serve)
  • 6 cups chicken stock
  • 1 bunch baby bok choy (quartered)
  • 8 3/4 ounces dumplings (frozen)
  • 7 ounces egg noodles (cooked, drained)
  • 8 shrimp (peeled, deveined, tails intact)
  • 2 ounces baby corn (halved)
  • 2 ounces snow peas (halved)
  • 2 ounces oyster mushrooms
  • 2 green onions (sliced, to serve)

Directions

  1. Heat oil in a saucepan over high heat. Sauté meat for 2-3 mins, until browned. Add soy sauce. Set aside.
  2. Add stock, bok choy, dumplings, noodles and shrimp. Simmer for 5 mins, until shrimp are cooked through. Add meat to soup along with remaining vegetables. Heat gently.
  3. Serve topped with green onions and extra soy.
