This recipe for Chicken and Mushroom Pizza takes only 25 minutes to prepare and is only 320 calories per serving, so you don’t have to have any guilt. Ingredients for this two-person recipe include sliced mushrooms, butter, boneless skinless chicken breasts, salt, ground black pepper, medium-sized pita bread, and grated cheddar cheese.

Ingredients

  • 2/3 cup mushrooms (cleaned and sliced)
  • 1 tablespoon butter
  • 1 chicken breast (half, skinless and deboned)
  • salt
  • ground black pepper
  • 2 pita breads (medium)
  • cheddar cheese (grated)

Directions

  1. In a saucepan, heat the butter on medium heat and saute the mushrooms for about 5 minutes.
  2. Season the chicken with salt and black pepper. Place in another saucepan, and cook until golden brown on both sides. Let the chicken cool and cut into strips.
  3. On top of the pita bread, add the mushrooms, chicken, cheese and place in a skillet. Cover and cook until the cheese melts.
  4. Serve immediately.

If you crave pizza but are on a health food kick, this is a pizza that you can have. With only 350 calories, it is amazingly good. Bite after bite you won’t feel like you’re on a diet. I did add 2 tbsp. of tomato sauce to make it a true pizza by nature. It is heavenly and if you are watching your figure, this is one you simply must try.
