If you are looking for a healthy, yet fun and flavorful twist on this traditional dish, why not try these Chicken and Mango Hamburgers. This recipe combines skinless chicken breasts topped topped with savory and gooey goodness. Use whole wheat hamburger buns and you have a tasty twist on a traditional sandwich. Enjoy!

Ingredients

  • 2 chicken breast halves (skinless and deboned)
  • 1/4 cup teriyaki sauce
  • 1 mango (Tommy Atkins)
  • mozzarella cheese (sliced)
  • onion (thinly sliced)
  • 3 whole wheat hamburger buns
  • jalapeno chili
  • avocado

Directions

  1. Marinate the chicken in the teriyaki sauce for 30 minutes.
  2. Peel the mango and cut into thick wedges. Set aside.
  3. Grill the chicken for 4 minutes on each side. When it is almost done, add cheese slices on top. Remove from the grill and allow the cheese to melt.
  4. Heat the bread in the grill. Also, cook the mango, 1 minute on each side.
  5. Assemble the hamburger and add onion, jalapeno chilies, and avocado. Serve immediately.

This healthy version of the hamburger isn't lacking any bit in flavor. The first time I made it I used the teriyaki sauce, but the second time I used sweet and sour sauce. It's a delicious alternative to the plain Jane hamburger that can get boring. My family loved it!
