  • 1/2 cup green curry paste (150G, mild)
  • 2 Tbsp. fish sauce
  • 1 Tbsp. coconut sugar
  • 400 mL coconut milk
  • 2 cups chicken stock (500ML)
  • 6 kaffir lime leaves
  • 2 stalks lemongrass (crushed)
  • 200 grams chicken breast fillets (2x, sliced)
  • 200 grams chicken thigh fillets (2x, sliced)
  • 500 grams broccolini
  • 2 Tbsp. lime juice
  • lime wedges (optional)
  • Thai basil (optional)
  • basil leaves (OPTIONAL), TO SERVE)
  • 1 Tbsp. rice wine vinegar
  • 2 Tbsp. lime juice
  • 1 tsp. ginger (finely grated)
  • 1 tsp. coconut sugar
  • 2 cucumbers (Lebanese, peeled and sliced)
  • 2 green chillies (long, seeded and thinly sliced)
  • 2 cups coconut (150G, shaved fresh, see cook’s tip)
