Ingredients

  • 3 1/2 ounces boneless chicken breast
  • 2 strips bacon
  • 1/4 cup cottage cheese
  • 4 slices rye bread (toasted)
  • 1/2 cup baby arugula
  • 1 small tomato (sliced thinly)

Directions

  1. Heat an oiled frying pan over medium heat. Add the chicken and cook, turning, until lightly browned and cooked through. Cover the chicken and leave to stand for 5 mins, then slice thinly.
  2. Cook the bacon in the same pan until crisp.
  3. Divide half the cheese between two bread slices and top with arugula, tomato, chicken, bacon, the remaining cheese and bread. Serve.
