  • 2 cups cooked chicken (shredded into large pieces)
  • 2 avocados (medium, diced)
  • 2 tablespoons lime juice (fresh squeezed)
  • salt (to taste, I didn't use too much salt because you can always add more at the table.)
  • 1/4 cup green onion (thinly sliced)
  • 1/2 cup chopped fresh cilantro (finely, or chop it more coarsely if you prefer)
  • 2 tablespoons mayo (or light mayo)

    Scoop it into a lettuce wrap and delish!!
    My husband is not a fan of avocados, but he even liked this and asked if we could have it again! It's almost like guacamole, so we eat it with tostada chips for a quick, fun, easy meal.

    This is honestly my favorite recipe ever!!! I make it at least once a month and never get tired of it. Using rotisserie chicken really cuts down on the time and adds a great flavor :)

    I added pesto to the mayo. I put on thin sandwich buns with tomatoes and spinach. Turned out great!!

    Delicious!!! Had Costco's very flavorful roasted chicken and shredded the breast meat for this salad. I added garlic salt and drizzled more lime juice to amp up the flavor. Served in a lettuce wrap with a side of sweet mango slices. This recipe is a keeper

    Made it just as the instructions said, and used rotisserie chicken. We ate inside warmed corn tortillas, but it was also good without any bread. It was delish, and easy. I will definitely make again.

    Love the flavor, used a vegannaise mayonnaise and added a little ground white pepper for a bit of kick. I like to dice and add the avocado on a per-serving basis, to keep them fresh. Great recipe for lunch or snack!
