Ingredients

  • 5 guajillo chilies
  • water
  • 2 cloves garlic
  • 1/4 onion
  • 1 tablespoon white vinegar
  • salt
  • oregano
  • 2 tablespoons low-fat mayonnaise
  • 2 chicken breast halves (skinless, deboned, and thinly sliced)
  • cooking oil (spray)

Directions

  1. Open the chilies, remove the seeds, and soak in hot water for 15 minutes.
  2. Once softened, grind in a food processor with the garlic, onion, vinegar, salt to taste, and oregano.
  3. Pour the sauce into a bowl, add the mayonnaise, and marinate the chicken in this mixture for 1 hour in the refrigerator.
  4. Spray cooking oil in a skillet and place over medium-high heat. Add the chicken and cook until golden brown.

This chicken might taste better without the added vinegar to the recipe. I don't think I would make it without adjusting the ingredients to the recipe. It sounds like an overall good recipe in general though.
