  • 1 onion (large, chopped)
  • 1/2 bell pepper (chopped)
  • 2 stalks celery (chopped)
  • 5 cloves garlic (chopped)
  • 2 tablespoons worcestershire sauce
  • 1 can diced tomatoes
  • 3 cups chicken stock
  • 2 cups rice (uncooked)
  • 1 chicken breast (large)
  • 1 pound andouille sausage (chopped)
  • 2 tablespoons parsley
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red pepper (cayenne)
  • 1/4 teaspoon ground thyme
  • 2 tablespoons vegetable oil (or bacon grease)

    Directions

    1. Bake chicken in the oven for 20 minutes. While this is cooking dice all of the veggies and sausage. When the chicken is cooked, shred or chop and set aside.
    2. Add onion, bell pepper, vegetable oil, and celery to the bottom of a large stock pot. Saute for 5 minutes, or until onion becomes translucent.
    3. Add tomatoes, garlic, parsley, sausage and chicken and simmer for 5 minutes with lid on.
