- 1 package Knorr® Rice Sides™ - Chicken flavor Broccoli
- 2 1/4 cups water
- 1 tablespoon I Can't Believe It's Not Butter!® Spread
- 7 ounces roasted red peppers (drained)
- 4 boneless skinless chicken breast halves
- Preheat oven to 350°. Prepare Knorr® Rice Sides - Chicken Broccoli with 2 cups water and Spread according to package directions; let cool slightly.
- Evenly top each chicken breast half with roasted peppers, then spread each with 1/4 cup rice mixture; bring up sides to form bundles and secure with wooden toothpicks.
- Combine remaining rice mixture with remaining 1/4 cup water in 11 x 7-inch baking dish. Arrange chicken bundles over rice. Bake uncovered 25 minutes or until chicken is thoroughly cooked. Remove toothpicks before serving.
