  • 56 oz. crushed tomatoes
  • 2 chicken breasts (large)
  • 4 cloves garlic
  • 2 Tbsp. cumin
  • 1 Tbsp. chile powder
  • 28 oz. black beans
  • 1/2 cup frozen corn
  • 1 can diced green chiles
  • 1 cup chopped onion
  • 2 Tbsp. lemon juice
  • 4 cups water (or chicken broth)
  • 2 avocados (medium)
  • 2 cups shredded sharp cheddar
  • 1 cup sour cream
  • chopped cilantro
  • scallions (sliced)
  • 8 corn tortillas (sliced into strips and baked until crisp)
  • salt
  • 1 cup prepared salsa

    Directions

    1. Saute onions with oil in a dutch oven until soft. Add diced garlic, cumin, chile powder and salt and stir for 30 seconds. Add broth or water and bring to a boil.
    2. Add chicken and poach until cooked through. Remove chicken and add crushed tomatoes, chiles, lime juice and salsa. Shred chicken and return to pan. Simmer on low until soup has cooked down and blended well.
    3. Add chicken and poach until cooked through. Remove chicken and add. Shred chicken and return to pan. Simmer on low until soup has cooked down and blended well.
    4. Taste and add salt and pepper and adjust seasonings. Add beans and corn and cook until warmed through.
    5. Ladle into individual bowls and top with tortilla strips, cheddar cheese, cilantro, scallions, avocado and drizzle with sour cream.
