Ingredients

  • 1 chicken breast (shredded)
  • 1/4 onion (sliced)
  • 1/4 cup green bell pepper (cut into strips)
  • 1/2 carrot (ground)
  • 2 tablespoons bbq sauce
  • 2 slices bread
  • oaxaca cheese (as desired, you can also use any other kind of cheese that you like)

Directions

  1. Toast the bread slices.
  2. Grease a deep, wide skillet with cooking spray, and add the onion and green bell pepper. Let them cook on medium until the onion browns.
  3. Add the chicken and carrot to the skillet, and cook for 2 minutes.
  4. Add the BBQ sauce and stir occasionally until all the ingredients are completely mixed.
  5. Turn off the stove and cover the toast with the chicken and vegetables.
  6. Sprinkle with oaxaca cheese.
  7. Grill the toasts in the oven until the cheese melts and serve.

While this is great for lunch, I love this as an appetizer. It's simple to put together and it's unique. I just remove the crust from my bread and slice it in four after its toasted. Makes for a simple handheld canapé for my guests.
