Ingredients

  • 1 chicken breasts (shredded)
  • 1/4 onions (sliced)
  • 1/4 cup green bell pepper (cut into strips)
  • 1/2 carrots (ground)
  • 2 tablespoons bbq sauce
  • 2 slices bread
  • chihuahua cheese (as desired, you can also use any other kind of cheese that you like)

Directions

  1. 1Toast the bread slices.
  2. 2Grease a deep, wide skillet with cooking spray, and add the onion and green bell pepper. Let them cook on medium until the onion browns.
  3. 3Add the chicken and carrot to the skillet, and cook for 2 minutes.
  4. 4Add the BBQ sauce and stir occasionally until all the ingredients are completely mixed.
  5. 5Turn off the stove and cover the toast with the chicken and vegetables.
  6. 6Sprinkle with oaxaca cheese.
  7. 7Grill the toasts in the oven until the cheese melts and serve.
