Ingredients

  • 1 chicken
  • 1 cup dried apricots
  • 1 cup pineapple (canned)
  • 2 onions
  • 4 garlic cloves
  • 1 teaspoon ginger
  • cinnamon
  • saffron
  • salt (to taste)

Directions

  1. Cut the chicken into pieces.
  2. Soak the dried apricots in water for about 30 minutes until they swell, then drain.
  3. Slice the onions and chop the garlic.
  4. In a hot pan, sear the chicken pieces with oil and brown the onions.
  5. Place all the ingredients in the tajine including the pineapple juice from the can.
  6. Cover the tajine and simmer until the chicken is cooked through and tender. Stir occasionally.
  7. Serve hot with spicy semolina.

Delicious dish! Not too spicy, the kids loved it
