    This was GREAT for the little kiddos. Easy to make, super healthy, and tasty. For super fast ease, I agree with the author to cook the chicken and quinoa ahead of time. Also, I didn’t broil it - I just kept the skillet on the stove and covered it for a bit until the cheese melted and it was perfectly fine.For my personal taste, it was a bit mild so I will probably spice up the chicken next time (maybe add the taco seasoning to the meat instead of the quinoa) or add some green chilies. But all in all, great addition to the dinner rotation.

    it was ok. not spicy enough for us, but that could easily be fixed by using spicier sauce.

    This turned out great! Been trying to find ways to prepare quinoa so that my husband will eat it, and he loved this one. I added some black olives and garnished with cilantro. Very easy, one-pot, 30 min meal!

    Added a little more flavor with Adobe and seasoned the chicken to my liking. It was delicious with some avocado on top!

    Don't double it. I thought I need to because I have two men in my family who always are hungry. We ended up having TOO MUCH. Stick with the direction here - even though it says it serves 4. Technically, it serves 6-8. It is DELICIOUS - Note - you only need avocado OR guacamole not both.
