Chicken Stir-Fry with Black Bean Sauce

  • 1 pound chicken breast (thinly sliced)
  • 1 1/2 tablespoons vegetable oil
  • 1 red onion (cut into wedges)
  • 2 carrots (peeled, cut into matchsticks)
  • 2 teaspoons fresh ginger (grated)
  • 1 teaspoon garlic (minced)
  • 5 1/4 ounces snow peas (halved)
  • 1/2 cup black bean sauce
  • 1 1/2 pounds long grain white rice (cooked, to serve)

Directions

  1. Heat a wok or large frying pan over high heat. Coat chicken with 1 tbsp oil. Stir-fry for 3 mins, or until browned and cooked through. Set aside and cover to keep warm.
  2. Add remaining oil and swirl to coat. Add onion and stir-fry for 2 mins. Add carrots, ginger and garlic. Stir-fry for 3 mins, or until tender. Add snow peas and 2 tbsp water. Stir-fry for 1 min, or until tender. Return chicken to wok. Add sauce and stir-fry for 2 mins, or until heated. Serve with rice.
