A unique take on breaded chicken, these chicken steaks are coated in breadcrumbs and stuffed with cottage cheese. Placed on a bed of tomatoes and covered with mozzarella, these chicken steaks make a great meal that is sure to impress. Can easily be prepared ahead of time.

Ingredients

  • 800 grams tomato
  • salt (as needed)
  • olive oil (as needed)
  • 250 grams cottage cheese
  • 3 tablespoons black olives (pitted and sliced)
  • 10 coriander (sprigs, chopped)
  • 6 steaks (chicken)
  • 1 egg (beaten)
  • breadcrumbs
  • 5 tablespoons mozzarella (grated)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Cover the entire bottom of a baking pan with tomato cut in pieces.
  3. Sprinkle with a little coarse salt, and drizzle with a little olive oil. Set aside.
  4. In a bowl, crush the cottage cheese with a fork.
  5. Add the olives and coriander, and stir well.
  6. Spread out the chicken, sprinkle with a little salt, and in the center place one or two generous tablespoons of cottage cheese.
  7. Wrap the steaks around the cheese.
  8. Coat the chicken in the beaten egg, and then in the breadcrumbs.
  9. Place the chicken on top of the tomatoes, as separate as possible to cook and toast more easily. Add the mozzarella to the tomato that is visible, and bake at 180 C for about 40 minutes.

If I make this again I will definitely add garlic (or maybe pesto) and pepper. I will not add the coriander to the cheese but will hold off and use it as a garnish after the dish is cooked. Retains more flavor that way. It was a good idea but I found it to be lacking in flavor.

Well this is a unique concept that I can say I've never seen before. The cottage cheese filling was surprisingly good with the chicken. I was worried about it, since I've never used it in a chicken dish, but the chunkiness and distinct flavor really gave the chicken some life. I love the breadcrumb crust on the outside as well. The dish goes from a crunch, to tender, juicy chicken, to chunky and flavorful filling. It pairs great with the tomatoes and cheese. A new dinner favorite!
