  • 1 whole chicken
  • 3 bell peppers (any color e.g. 2 green, 1 yellow)
  • 6 large carrots (peeled and chopped)
  • 4 celery stalks (chopped)
  • 1 yellow onion (large, finely chopped)
  • 2 cloves garlic (finely chopped)

  • 8 cups water (give or take some)

    Directions

    1. Clean the chicken, salt and pepper it, and cook it in a pressure cooker until done. Remove the chicken and set aside to let it cool down slightly. Transfer the broth to a large pot. Once the chicken has cooled down sufficiently to handle, take the meat off the bone. Chop or shred the meat, and add it to the broth in the pot.
    2. Add the chopped bell peppers, carrots, celery, onion and garlic to the pot. Add enough water to cover all the ingredients. Bring to a boil. Add salt and pepper to taste. Add herbs and spices of choice.
    3. Turn the heat down and simmer for about 45 minutes – until all the carrots have softened. If needed, add more seasoning around the 30 minute mark.
    4. Weigh out 10 ounces for a serve. Enjoy!
