Description

Satay is a dish of seasoned meat that is grilled on skewers and served with a sauce. This chicken satay recipe is inspired by the flavors of Thai cuisine. Cut into bite size chunks, the chicken is marinated in oil, lemon juice, and soy sauce. The longer the chicken marinates, the more flavorful and tender it will be. Served with a peanut sauce, this Chicken Satay is a Thai dream come true. Serve on a bed of rice. If using wooden skewers, be sure to soak them so they do not burn while grilling the meat.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 200 milliliters soy sauce
  • 1/2 lemon (juiced)
  • 700 grams chicken fingers (cut into bite size chunks)
  • 2 tablespoons vegetable oil
  • 2 onions (small, finely diced)
  • 1 garlic cloves (diced)
  • 125 milliliters creamy peanut butter (version)
  • 250 milliliters water
  • 1/2 lemon (or lime, juiced)
  • 1 pinch cayenne pepper

Directions

  1. 1Soak the kebab sticks in water so they do not burn during cooking.
  2. 2In a bowl, mix together the vegetable oil, sesame oil, soy sauce, and lemon juice. Add the chicken and stir well. Cover with plastic wrap and marinate in the refrigerator as long as possible.
  3. 3Heat up the 2 tablespoons of vegetable oil in a skillet and add the onion. Saute until softened then add the garlic stirring everything together.
  4. 4Add in the peanut butter, water, and lemon or lime juice. Simmer on low heat a few minutes constantly stirring until the consistency of heavy cream. If too thick, add a bit more water.
  5. 5Preheat the oven to 200 degrees Celsius.
  6. 6Spear the marinated chicken onto the kebab sticks.
  7. 7Grill or cook under the oven’s broiler for 15 minutes turning frequently.
  8. 8Serve with the satay sauce sprinkled with cayenne pepper.
