Ingredients

  • 1 grilled chicken breast
  • lettuce (Chopped, about half a bowl)
  • 1/2 mango (cut into small cubes)
  • 3/4 cup jicama (cut into small cubes)
  • 1 tablespoon light mayonnaise
  • 1 teaspoon red pepper flakes

Directions

  1. Mix the mayonnaise and red pepper flakes together in a bowl.
  2. Cut the chicken breast into small cubes or strips.
  3. Place the lettuce into a separate bowl and pour the dressing over it. Mix the lettuce until it’s completely covered in the dressing.
  4. Place the chicken, jicama, and mango on top of the lettuce and serve.

This is a new favorite for me! I love this salad, but my dressing was altered due to the fact I didn't have any crushed red pepper flakes. Instead I mixed Thai chili sauce with mayonnaise and used that for my dressing.
