Ingredients

  • 2 cups chicken stock
  • 2 teaspoons fresh ginger (grated)
  • 1 cinnamon stick
  • 2 teaspoons fish sauce
  • 2 teaspoons soy sauce
  • 3 ounces filets (chicken, thickly sliced)
  • 1 tablespoon lime juice
  • 3 ounces rice noodles (soaked in boiling water for 5 mins then drained)
  • 1 1/4 cups cilantro leaves (fresh)
  • 1 1/4 cups beansprouts
  • 1 red chili (small, thinly sliced)
  • 1 spring onion (thinly sliced)

Directions

  1. Bring stock, ginger, cinnamon stick, fish sauce, soy sauce and 1 cup water to a boil over high heat, cover, reduce heat to low and simmer 5 mins. Discard cinnamon stick. Add chicken and lime juice and cook for 2 mins, or until chicken is cooked through.
  2. Divide noodles and chicken between 2 serving bowls. Ladle hot stock over noodles and serve topped with cilantro, sprouts, chili and onion.
