  • 1/2 yellow onion (large, grated, don't cut onion in half, just grate half of a whole onion)
  • 1/4 cup olive oil
  • 2 garlic cloves (medium, peeled and minced)
  • 28 ounces crushed tomatoes (we use Muir-Glen)
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 1 pinch sugar
  • 4 chicken breast cutlets (1 1/4 to 1 1/2 pounds total)
  • salt
  • 2 eggs
  • 1 cup breadcrumbs (we make our breadcrumbs running pieces of stale French bread through a blender)
  • 1 cup grated parmesan cheese (freshly)
  • 1/4 cup olive oil
  • 2 tablespoons fresh basil leaves (thinly sliced)
  • 8 ounces mozzarella cheese (sliced)

really easy and really good!
This recipe is super easy to make and delicious! My wife and I had another couple over for dinner and I decided to give this recipe a try. They could not stop complimenting how delicious the sauce was. Much much better than just using a jar of marinara. I used the Muir as recommended, and also used a grater for the onions which I think really gets the juices flowing. Highly recommend!

Excellent, to me a recipe is a guide and this was a great start. I didn't make many changes the first time and I'm not sure how I would change it. We love simple tasty recipes and this is definitely one of the best.
