great substitute for breaded chicken parm.. i used thighs instead of breasts and ate it with zucchini noodles and it came out amazing 👍👍

Pretty good. Didn't have any parm, so I used pepper-jack (chopped into small pieces because I lack a shredder) to coat the chicken, and some sliced sharp cheddar for ontop of the tomatoes. I used Del Monte's diced canned tomatoes with Basil, Garlic, and Oregano, and added some Chile powder to that. The tomatoes hadn't really reduced much by the time I had to add them to the chicken (oh, and I didn't use any bacon), and before that the cheese was in much larger chunks than it probably should have been so it didn't really stick to the chicken, but it turned out pretty good in the end. The juices from the chicken kept the cheese from burning on the pan (which was also non-stick), and the extra egg that I poured on top didn't even burn, the excess cooking up nicely next to the chicken. Really, I feel like you'd have to be pretty unlucky to mess this one up, or maybe I was just the really lucky one. ;) Fork-tender and delicious, definitely one I'll be coming back to.
