  • 1 1/2 pounds chicken breast (cut into 1-inch cubes)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons creamy peanut butter
  • 1 1/2 tablespoons Sriracha
  • 2 teaspoons tamarind concentrate
  • 1 teaspoon granulated sugar
  • 1 tablespoon thai chiles (finely chopped, plus more for garnish, if you don't like spicy, you can use less or cut out altogether)
  • 1 red bell pepper (thinly sliced)
  • 1 cup shredded carrots
  • 2 large garlic cloves (minced)
  • 3 large eggs (lightly beaten)
  • 1 cup bean sprouts
  • 1/4 cup scallions (chopped, for garnish)
  • 1/4 cup peanuts (crushed, for garnish)
  • chopped cilantro (for garnish)

A yummy dish! I cut the amount of ingredients in half as the dish was for 2. And the flavors were great! I will try to do a better presentation the next time. But taste-wise, will do the same thing. Thank you for this great recipe!
