Ingredients

  • 1/4 pound green beans (roughly chopped)
  • 2 ounces small pasta
  • 1 teaspoon oil
  • 5 1/4 ounces chicken breast
  • 1 onion (medium, finely diced)
  • 1 teaspoon tomato paste
  • 3 cups chicken stock
  • 1 medium carrot (peeled and diced)
  • 1/2 pound broccoli (cut into florets)
  • 5 tomatoes (coarsely chopped)
  • 3 sprigs fresh parsley (chopped)
  • 2 teaspoons pesto (store-bought)

Directions

  1. Blanch green beans in boiling salted water. Drain. Cook pasta until al dente. Drain.
  2. Meanwhile, heat oil in a large saucepan and sauté chicken for 2 mins per side. Season then add onion and tomato paste and cook for 3-4 mins. Add stock, carrot, broccoli and tomatoes. Bring to a boil, cover then simmer for 10 mins. Remove chicken, dice then return to pan. Add pasta and beans. Serve with parsley and pesto.
