Ingredients

  • 150 grams whole wheat spaghetti
  • cooking oil (spray)
  • 1/3 cup onion (chopped)
  • 1 poblano chili pepper (roasted, peeled, and in strips)
  • 1 clove garlic, finely chopped
  • 1/4 cup sour cream
  • 1/2 cup mozzarella cheese (grated)
  • 1/3 cup whole wheat breadcrumbs
  • salt
  • ground black pepper
  • 2 chicken breasts (thinly sliced)
  • cooking oil (spray)

Directions

  1. Cook the pasta following the instructions on the package.
  2. While the pasta is cooking, season the breadcrumbs with salt and pepper to taste. Cover the chicken on both sides with the breadcrumbs.
  3. Spray a skillet with cooking oil, and place over medium heat. Once it is hot, add the chicken and cook on both sides. Remove and set aside.
  4. Spray another skillet with cooking oil and add the onion and poblano pepper. Cook until the onion becomes transparent. Add the garlic and cook for 2 more minutes.
  5. Add the pasta, cream, and cheese. Stir until the ingredients are mixed and remove from the stove.
  6. Serve the chicken with the pasta on top.

This is like something you would get at an expensive restaurant. I loved every bite and so did my dinner guests. I didn't use the whole wheat breadcrumbs and noodles, but that is just my personal preference. The flavors in this zesty dish were robust and tantalizing to the pallet.
