These buffalo chicken meatballs are the perfect appetizer for game day entertaining. They only require 6 ingredients and 45 minutes to make, and at 210 calories per serving they are not going to get you off your diet like fried wings would. If you want to try these as a meal, serve them in a roll with cheese and extra sauce for a buffalo chicken meatball sub or use them to top a salad with a little bit of your favorite creamy dressing.

Ingredients

  • 1/3 cup hot sauce
  • 40 grams butter
  • 0.5 kilograms chicken breast (ground)
  • 1 stalk celery (finely chopped)
  • 1 egg
  • 3/4 cup breadcrumbs

Directions

  1. Preheat the oven at 232C.
  2. Heat the butter and the hot sauce in a deep skillet on medium until the butter melts, and let it cool off.
  3. Grease a cooking tray with cooking spray.
  4. Mix the butter sauce, chicken breasts, celery, egg, and breadcrumbs in a large bowl.
  5. Form the meatballs using your hands and place them on the cooking tray.
  6. Place the tray in the oven and let it cook for 15 minutes.
  7. Remove the cooking tray from the oven and let the meatballs cool off for 10 minutes before serving.

These are so delicious, and they don’t last long so double or triple your recipe. If they don’t all get eaten, they hold up well in the fridge, or you can freeze them. I serve mine with homemade blue cheese dressing. This is the most requested dish people ask me to contribute for potlucks.
