Ingredients

  • lettuce (Purchased, or salad greens mixture, with carrot)
  • chicken (Precooked frozen seasoned cut)
  • mango (diced)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon red onion (minced)
  • 1 pinch thyme (dry ground)
  • salt and ground black pepper

Directions

  1. Combine the lettuce with the chicken and mango.
  2. Whisk together the olive oil, vinegar, onion, thyme, salt, and pepper in a separate bowl. Pour over the salad and toss. Serve.

Mangos add a nice contrast to the chicken in this salad. Try adding toasted almond slivers and dried cranberries for added health benefits. Quick salads can be made with store bought pre cooked and cubed roasted chicken.
