  • 1 lemon (zested and juiced)
  • 1 1/2 pounds boneless skinless chicken breast (cut into 1-inch cubes)
  • 1 red onion (large, cut into wedges)
  • 4 plum tomatoes (cored, seeded, and cut into wedges, or a container of cherry tomatoes)
