Thirty minutes is all it takes to make a delicious meal for you and your favorite person. This Chicken Hamburgers with Coleslaw is a perfect complete meal that is savory, cheesy, spicy, and hearty. Ingredients include boneless skinless chicken breasts, mustard, garlic powder, spicy salsa, salt, pepper, cheddar cheese, light mayonnaise, lime, parsley, cilantro, red cabbage, red bell pepper, and hamburger buns. Your taste buds will thank you.

Ingredients

  • 2 boneless, skinless chicken breasts (medium, cubed)
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • 1 tablespoon prepared salsa (spicy)
  • salt and ground black pepper
  • 1/4 cup cheddar cheese (shredded)
  • 3 tablespoons light mayonnaise
  • 1 lime
  • 1 tablespoon prepared salsa (spicy)
  • 1 tablespoon parsley (minced)
  • 1 tablespoon cilantro (minced)
  • 1/4 red cabbage (finely shredded)
  • 1/2 red bell pepper (diced)
  • 2 hamburger buns

Directions

  1. Finely grind the chicken. Place it in a bowl with the mustard, garlic, salsa, cheese, salt, and pepper. MIx well, divide into 2 equal parts, form into patties, and cook in a skillet until golden brown on both sides and cooked through.
  2. Heat the hamburger buns and place a burger in each.
  3. Prepare the salad by mixing the mayonnaise, lime juice, salsa, parsley, and cilantro together in a salad bowl. Add the cabbage and pepper and mix to combine. Refrigerate until serving.
  4. Top the burgers with the coleslaw and serve.
