Directions
- Preheat oven to 350°F. Place red beans and rice (do not include seasoning packet) in 13 x 9-inch baking dish; top with olives and chilies. Place chicken in baking dish.
- Combine boiling water, tomatoes and contents of rice seasoning packet in medium bowl. Pour over chicken mixture. Cover and bake 45 minutes. Remove cover; sprinkle with cheese and tortilla chips. Bake 5 minutes longer or until rice is cooked and chicken is done (internal temp 170°F).

It was beyond awesome. I made it for my Nephew and his new wife and sons, 13 & 14 plus my Mom and Husband. The boys loved it and the best was my husband who is the greatest cook I know who said it was really good. Thanks for the recipe.

I really liked this casserole because of the quickness and ease of getting everything together and cooking. The kids loved it. I substituted chicken thighs and omitted the black olives. And probably added way too much cheese! it's a keeper!
