Delicious!!! The only thing I changed was I lightly fried the corn tortillas first instead of baked them. 30 seconds each side in hot oil. Worth it!

This was the best enchilada recipe I have made yet. The cilantro and green chili’s really set it apart also, simmering the chicken breasts in the enchilada sauce made it so moist and very flavorful!

Pretty good! I cooked onions in the pan then chicken and sauce, and added some of the onions in with the filling. Rolling tortillas was difficult because they were too hot for me to roll, then too hard when cooled.

Loved this recipe. I added a poblano pepper for a little extra heat. The leftovers were almost as good as the original.
