Made with coconut milk, this chicken curry is a little sweet and the spice depends on you. Use a curry powder with the spiciness of your choosing. Easily made in one pan, this is a great dinner for a week night. Serve with your favorite type of rice.

  • 3 garlic cloves
  • 1/2 sausage (meat)
  • olive oil (to taste)
  • 1 whole chicken (cut in pieces)
  • 1/2 can peeled tomatoes (in pieces)
  • 4 sprigs coriander
  • 3 tablespoons curry powder
  • 1 can coconut milk
  • salt (to taste)

    Directions

    1. Heat the olive oil in a large saucepan. Add the chopped onion, chopped garlic, and sliced sausage. Saute until golden.
    2. Add the chicken, and mix well.
    3. Cover with tomato and chopped coriander. Cook for 5 minutes.
