Description

Made with coconut milk, this chicken curry is a little sweet and the spice depends on you. Use a curry powder with the spiciness of your choosing. Easily made in one pan, this is a great dinner for a week night. Serve with your favorite type of rice.

Ingredients

1 onions (small)
3 garlic cloves
1/2 sausages (meat)
olive oil (to taste)
1 whole chicken (cut in pieces)
1/2 can peeled tomatoes (in pieces)
4 sprigs coriander
3 tablespoons curry powder
1 can coconut milk
salt (to taste)

Directions

1Heat the olive oil in a large saucepan. Add the chopped onion, chopped garlic, and sliced sausage. Saute until golden.
2Add the chicken, and mix well.
3Cover with tomato and chopped coriander. Cook for 5 minutes.
4Add curry powder and coconut milk. Mix everything very well.
5When curry begins to boil, check the salt.
6Cook for 15 minutes.
7Serve hot with white rice.
