- 2 tablespoons oil
- 1 pound chicken breasts (cut into cubes)
- 1 onion (peeled and finely diced)
- 1 clove garlic (peeled and smashed)
- 2 tablespoons curry powder
- 3 tomatoes (diced)
- 14 ounces coconut milk
- 8 ounces baby spinach
- Heat the oil in a skillet and sauté the chicken for 4-5 mins, turning as necessary, then add the onions and garlic. After about 2 mins, stir in the curry powder and sauté briefly. Add the diced tomatoes and cook for 3–4 mins. Pour in the coconut milk and simmer for 10 mins, then add the spinach. Season to taste and serve with naan bread.

This was quick, easy and very flavorful. I used unsweetened coconut milk, not sure if that was correct or not but it sure did lower the calorie content when I added it all up. I put this over zucchini noodles for a low-carb volume bump, delicious!

Delicious could use a little more flavor, so might try heavier on spices and salt next time. Also liquid from tomatoes and spinach made curry thinner than desired. Maybe less tomato?

Super easy recipe to make. We like our food a little on the spicy side so we did the full 2 Tbs of curry and added red pepper flakes for extra heat.

It turned out great. Added some chili to spice it a bit. Also I suggest adding the spinach and leave them to cook for a maximum of 5 minutes for a better result.
