Ingredients

  • 1 loaf ciabatta (torn into 3/4 inch pieces)
  • 1 tablespoon olive oil
  • 3 1/2 ounces prosciutto
  • 1/2 cup mayonnaise
  • 1 lemon (zested and juiced)
  • 1/2 clove garlic (minced)
  • 1/2 teaspoon worcestershire sauce
  • 3 drops hot pepper sauce
  • 1 rotisserie chicken (shredded)
  • 4 hard-boiled eggs (peeled, halved)
  • 5 1/4 ounces baby spinach leaves
  • 1 1/2 ounces parmesan cheese (shaved)

Directions

  1. Preheat oven to 350°F. Line 2 baking trays with parchment paper.
  2. Toss bread with olive oil then spread out over 1 baking tray. Season. Arrange prosciutto on other tray. Place both trays in oven and bake for 5-10 mins, until crisp and golden. Let cool then tear prosciutto into smaller pieces.
  3. Meanwhile, whisk together mayonnaise, lemon zest, lemon juice, garlic, Worcestershire sauce and hot pepper sauce. Season. Toss with bread, proscuitto, chicken, eggs, spinach and cheese.
