Ingredients

  • 4 pounds boneless skinless chicken breasts (– cubed)
  • 3 tablespoons sun-dried tomatoes (– chopped)
  • 2 cloves garlic (– chopped)
  • 1 lemon
  • 1/4 cup cilantro (– chopped)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup romano cheese (– grated)
  • 1 scallions (– chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground oregano
  • 1 teaspoon ground cumin
  • honey mustard dressing (for the Salad Greens)
  • 3 tablespoons mustard (smooth, – your favorite)
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Combine all of the ingredients for the rub in a medium sized bowl and set aside.
  2. Place the cubed chicken a little at a time in the food processor and process to desired consistency.
  3. Place the ground chicken in a large bowl and add the remaining ingredients for the burgers.
  4. Shape the burgers into a ball and roll in the rub; then flatten the burgers to desired thickness.
  5. Grill burger until juices run clear. The cooking time depends on the thickness of the burger.
  6. Serve with your favorite lettuce, tomato and cucumber.
  7. Honey Mustard Dressing for the Salad Greens
  8. Combine all of the above ingredients in a small bowl and whisk.
  9. Adjust the flavors for the dressing to your liking.
  10. Use on salad and for burger.
