Chicken Breasts with Farinheira Sausage

Description

This hearty dish combines the flavors of poultry with a traditional smoked portuguese sausage called farinheira. Covered with a layer of melty cheese over a bed of mushrooms, this dish is a complete meal and gluten free friendly.

Ingredients

6 mushrooms
3 chicken breasts
1/2 lemon
1 pinch salt
1 farinheiras (or sausage)
100 grams mozzarella cheese (half a pack)

Directions

1Start by preheating the oven to 180 degrees Celsius.
2Thoroughly wash the mushrooms, dry them with kitchen paper and cut them into thin slices, distributing them on a baking tray.
3Cut the chicken breasts in half and place them over top of the mushrooms. Sprinkle with the lemon juice and season with a pinch of salt. Just use a little, since the sausage will provide more seasoning
4Open the sausage, remove the skin and cover the chicken breasts with the filling.
5Put a lot of mozzarella cheese over top of the sausage and chicken.
6Bake for about 25 minutes, until it is well toasted. Serve accompanied with white rice.
