  • 4 boneless skinless chicken breasts (2-3 pounds)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • ground black pepper (to taste)
  • avocado oil
  • 3 pounds tomatoes (about 4 large tomatoes, cut into half moon shapes)
  • 5 garlic cloves (minced)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • ground black pepper (to taste)
  • basil (or parsley, finely chopped)

This was delicious!! We have an abundance of tomatoes in the garden, fresh basil on the patio and leftover chicken breast. It was a great last minute meal to throw together!

We had leftover chicken we didn’t know what to do with so we tried this and it was amazing! Such good flavors! We had it on top of some noodles. Will make this again

This turned out so well!!! I was skeptical because tomatoes are out of season and just “add water” sounded like it wouldn’t compensate for it. But both my roommate and i went back for seconds, I was generous with the garlic and the oregano and I was so pleased with the fresh flavor and easy instructions. 10/10 will make this again!!

Yummyyyyy I did modify slightly by not using fresh garlic and parsley. Also I used Italian seasoning instead of basil(it’s included) Came out delicious though and I will definitely make it again
